Vastedda della Valle del Belice PDO is a typical product of the Valle del Belice in Sicily, produced with sheep's milk and is one of the very few sheep's stretched cheeses. The Vastedda of the Valle del Belice PDO is a rind-free cheese and like all sheep's cheese its percentage of fat is not less than 35% on the dry substance, while that of sodium chloride does not exceed 5% on the dry substance. The Vastedda of the Valle del Belice PDO has a high protein content because during the stretching process of the pasta a fat is washed off, which then increases the amount of protein at the same weight. In addition, the operation of actual artisan stretching requires a special ability given the poor attitude of sheep's milk to be transformed into spun paste cheeses.
