Valtellina Superiore Prestigio Triacca 2010 is a wine made from Nebbiolo grapes grown in the beautiful Valtellina, a valley in Lombardy which is east-west oriented, so the sun is always there from morning till night over the vineyards. Triacca produces this wine with the drying technique : vine-shoots are cut with grape clusters still on them to be harvested 30 days later in order to disrupt the lymphatic flow of the plant to the cluster and start must concentration process. The grapes are manually harvested and taken to the cellar for de-stemming, alcoholic fermentation takes place in steel tanks for about 17 days at a temperature of 29 ° C. Then the wine is separated from the skins and place in new oak barrels for 12 months before blending and bottling.
