For this purpose, the rare "bench mince," a unique cut found in the animal's under shoulder, is used, of which just over 1 kg per specimen is obtained. In the production process of Salame Felino IGP, the addition of fat is avoided; instead, during the hand trimming stage, it is carefully removed. Despite being a charcuterie product, the salami is remarkably lean and is among the healthiest on the market. It is preferred to use only selected pork cuts for Parma ham, avoiding foreign or lower quality meats. Such care ensures the high quality of the final product. After mixing the meat with spices, Salame Felino IGP is stuffed into all-natural pork casing (known as "gentile" or "culare") and hand-tied with natural fiber twine. It then undergoes a slow curing process in traditional environments.
