Tommasi Ripasso Classico Superiore is a wine produced through two fermentations and above all two macerations that allow this wine to get rich in color, aromas and structure. The Ripasso is a typical wine of Valpolicella and Tommasi Ripasso is produced with grapes from the best vineyards. The grapes are harvested around the end of September and taken to the cellar for fermentation with maceration that lasts for about 12 days at a temperature of 25-28 ° C to obtain a fresh and pleasant wine. The Ripasso technique is to insert the Amarone grape skins in stainless steel tank that contains the future Ripasso that re-ferment for 12-13 days and is enriched in color, perfumes and structure.
