Testun al Barolo is a half-fat cheese, matured for more than a hundred days on special wooden boards in tufa caves. Testun al Barolo passes part of maturing period in contact with pomace used for the production of Barolo, which causes the Testun, besides the long-lasting, to acquire typical hints of wine. Testun al Barolo is excellent eaten with a good tasty red wine as an accompaniment to a jam or caramelized figs. The Testun Barolo comes with a purple colouration from maturing with the skins, the hard texture, slightly persistent.

How it's made | Testun al Barolo is produced with cow's milk. Once the shape is created, the cheese is matured in tufa caves on particular wooden boards, during the maturing period the cheese is enriched and complexed aromatically. The last month of aging is in contact with Nebbiolo's pomace for Barolo, and it is here that it assimilates vinous smells and violet coloration. |
