Taurasi Feudi di San Gregorio is a wine made with the main grape variety of Southern Italy: the Aglianico. This wine is now considered by many as the 'Barolo from the South' for its body and elegance. The Aglianico is a variety that is able to gather in a great quantity of polyphenols in its bunch and since it grows in vulcanic areas in Italy this grape is also able to deliver wines with incredible savoury and mineral features; that is why these wines are unmistakable and so appreciated. Feudi di San Gregorio relies so on this variety so much that the Aglianico is at the centre of many research projects. The University of Milan and the University of Naples are involved in studying this variety to help express itself at its best. Taurasi is the area where the Aglianico vineyards stand and where this incredible wine comes from. The grapes are hand-harvested when phenols have reached their perfect level of ripeness and they are brought to the winery, pressed and put in controlled temperature steel tanks for the alcoholic fermentation. The fermentation with maceration lasts for about 3 weeks, while the musts turn to wine, it is also enriched with all the substances that the skins and the grape-seeds releases such as polyphenols and aromas. The wine is separated from the skins and the grape-seeds and then put in French oak barrels for a 18-month ageing, then the wine is blended and bottled. The bottles rest in the cellar for 9 months before being released on the market.
