How it's made | The dolcecalabrese sausage is prepared with selected pork meat, the parts used are the shoulder and underbelly of the pig, which are minced into a medium grain and added during the mixture of typical Calabrian pepper sauce, fennel, salt and pepper. The gut used is of animal origin and is tied by hand in the characteristic horseshoe shape. This is followed by drying and short maturing for about 30 days in special cells with controlled temperature and humidity. |
