TASTING NOTES: The colour of the I Sodi di San Nicolò Castellare di Castellina is deep ruby with garnet nuances, on the nose it is very intense and fragrant, the fruits are well recognisable, from the cherry to the black cherry, with a very pleasant balsamic background. On the mouth it is full, persistent and complex, its excellent freshness is a great balance with the elegant full-body of the wine.

I Sodi di San Nicolò is the main wine of the company Castellare di Castellina, made from a Sangiovese and Malvasia Nera cru in the town of Castellina in Chianti located at 350-400 m asl from plants of 25-30 years of age. The soil of the Sodi di San Nicolò vineyard is mostly calcareous and the name Sodi comes from the presence of stones on the soil, which makes this type of soil able to deliver incredible products. The Sangiovese and the Malvasia Nera are hand-harvested and brought to the winery from the de-stemming and the vinification, that takes place in temperature controlled stainless steel tanks at a temperature of 28°C for about 20 days, during which the skins and the seeds transfer polyphenols and aromas into the wine, characterising this wine. Afterwards the wine is separated from the skins and 50 % of the wine is put in new French oak barriques while the other 50% in second and third-passage barriques. They age for 30 months before blending and bottling. The wine then rests in the cellar for 12 months before releasing.
