Soave DOC Monte Ceriani Tenuta Sant'Antonio is a wine produced by the Tenuta Sant'Antonio winery in the municipality of Colognola ai Colli. The grapes with which Soave DOC Monte Ceriani Tenuta Sant'Antonio is produced are 90% Garganega - Trebbiano Soave 5% - Chardonnay 5%. The harvest is strictly manual and the pressing of the whole bunches takes place by preventing the contact of the oxygen in the air with the must then in an inert atmosphere saturated with nitrogen. Before pressing, the grapes are sprinkled with dry ice which, in addition to saturating the atmosphere together with the nitrogen, lowers the temperature, the peels macerating with the juice at low temperature yield the aromatic compounds which will then be stored and expressed in the wine.
