How it's made | The production of the Lombardy Slinzega is similar to that of the bresaola, once the piece of meat to be used for the production of the salami has been chosen, it goes through salting where a brine with salt, cloves, garlic, pepper and bay leaves is used for the Slinzega. After 10 days of salting, the sausage is dried, where the meat continues to be massaged, and finally matured in cool, ventilated rooms. The maturing process lasts up to 30 days. |
