The Vialone nano is an Italian rice variety common especially in the North of Italy. It was created in 1937 as a crossing between two very common varieties, the Vialone and the Nano (nano literally means 'dwarf' because of the short size of the plant). It is a semi-thin rice, with round and medium-long grains. The semi wholeweat Vialone Nano rice is different from the traditional white one because its refinement process which is milder and so its nutritional properties are intact. In comparison to its white version, the semi wholeweat Vialone Nano rice by Cà Vecchia has a stronger taste.

How it's made | The semi wholeweat Vialone Nano rice by Cà Vecchia is made with grains picked only from the fields on the left bank of the river Mincio. To enhance its qualities, the production of the rice starts 4 months after the harvest. The grains refined for a shorter time compared to the white rice and for this reason it keeps better is nutritive features and natural fibres. |
