The Sauvignon by Livio Felluga is a fresh and easy to drink wine. Sauvignon is a grape variety of French origins which arrived in Friuli during the Hapsburg domination. Sauvignon started to be planted at the beginning of the 20th century and nowadays, a grape variety and a wine that represents the Friuli wine tradition. Grapes are hand-harvested within the first ten days of September and they are then destemmed and left in its own juice to macerate in a oxygen-free environment and at a controlled temperature of 8°C for a short period of time. Through this process, the aromatic elements which are in the Sauvignon grape skins can spread in the musts and give the wine the aroma features. Afterwards the musts are clarified and inoculated with selected yeasts and the alcoholic fermentation takes place in steel tanks at a controlled temperature of 16°C. At the end of the fermentation, the wine is left to refine in stainless steel tanks for about 6 months and then it is bottled and left there for 2 months before being released on the market.

Livio Felluga Sauvignon is perfect as an aperitivo or together with seafood starters. Thanks to its freshness and minerality, it goes very well with seafood pasta dishes, even spiced ones, and with seafood mains not particularly elaborate. Excellent paired with fresh cheeses such as buffalo mozzarella from Campania or burrata from Puglia.
