Santa Margherita Prosecco is produced by Santa Margherita winery and in composed by 100% Glera grapes. The grapes are harvested around the middle of September and taken to the cellar for pressing, the musts ferment in steel containers at a temperature of about 16°C for ten days, the basic wines Prosecco are then blended according to the Charmat method for refermentation. This process consists in the addition of sugar and selected yeasts that will lead the second fermentation inside the autoclave for about 3 weeks at a controlled temperature of 16° C, this allows the appearance of famous bubbles. Subsequently Santa Margherita Prosecco is bottled in isobaric conditions and released on the market.
