Salame di Felino Salame di Felino IGP Marca Rosa is obtained exclusively from selected pork meat, with the addition of 25-30% fat. It is produced exclusively in the province of Parma, the name of the sausage derives from the town of Felino. The pigs used are bred and slaughtered in Italy, the meat is minced into a coarse grain and stuffed into the natural gut of the pig. Salame di Felino is unique for its consistency, in fact it is characterised by its compactness, its not very elastic consistency and its thinness. In fact, Felino salami has not only less fat than the average Italian salami but also a higher protein content. It has a ruby red colour and is sweet and delicate in the mouth. It is cut diagonally with a knife, thus creating long slices; the slices cut must be as thick as a grain of pepper.
