Ca dei Frati Ronchedone is a structured wine, very powerful that comes from vineyards located towards the moraine hills of the Benaco Bresciano area. Marzemino, Sangiovese and Cabernet Sauvignon grapes are manually harvested at different times and vinified separately. After the harvest the grapes are crushed in the cellar and placed in stainless steel tanks for fermentation and maceration. The skins in contact with the must release color, texture and aroma and alcohol acts as a solvent in this process of extracting substances from the skins and grape seeds to the must. The fermentation temperature is around 27-30 ° C and maceration lasts about three weeks on average. After fermentation the wines are separated from the skins and age in oak barrels for 14 months before bottling. Once bottled, the wine rests in the cellar 10 months before release.
