How it's made Puzzone di Moena PDO is a whole-milk cheese, with a semi-cooked paste, which is salted in brine and lasts two days. From the age of 15-20 days, the forms are wetted weekly with warm water; in this way an air-impermeable patina forms which envelops the forms and favors the fermentation in the dough. The maturation of Puzzone di Moena PDO takes place in special wet rooms in the Predazzo dairy in Moena, the shapes are arranged on fir boards and are turned twice a week.
