Prosecco DI Valdobbiadene Prosecco Superiore DOCG Rive di Colbertaldo Maschio dei Cavalieri

Prosecco Le rive di Colbertaldo is a selection of Glera grapes from the Colbertaldo hills, which boast a great exposure and are particularly suitable for wine-growing. Around the end of September the Glera grapes of Colbertaldo are picked by hand and brought to the winery for the pressing. Selected yeasts are added to the musts and the alcoholic fermentation is carried out in steel tanks at a controlled temperature of 16°C and lasts for about 13 days. Afterwards the spumante base wine is blended and poured into a stainless steel tank, called autoclave, with yeast and sugar where the second fermentation will take place and the bubbles will be created. Each additional operation, such as pouring and bottling, is carried out isobarically not to damage the bubbles.
