The Prosecco NoS02 is a very peculiar wine as it is the first Prosecco to be produced without adding sulphites, so it is suitable for everyone. It is produced in limited bottles. The name comes from the chemical formula of the sulphurous dioxide that is usually added in the wines, which is SO2. The name NoSO2 means that no sulphurous dioxide is in the wine. Glera grapes is harvested at the end of September and then brought to the winery for the pressing. The musts are inoculated with selected yeasts for the alcoholic fermentation. After this process, the wine refines on extended lees for a month, without being poured. Sugar and yeasts are then added and the wine is put in autoclave for the second fermentation. The wine rests on the extended lees for 2 months in autoclave before being isobarically bottled in order to avoid losing the bubbles created during the second fermentation.
