Prosecco Colmei Jeio is a wine dedicated to Desiderio Bisol, whose wife used to affectionately call him Jeio. This Prosecco is made with 100% Glera grapes which are hand-harvested in September. For the production of this Prosecco the cold maceration is used, in order to get the most and the best of the aromatic potential of the Glera grapes. After pressing, musts ferment at a controlled temperature in steel tanks where they stay until blending. Once blended, the wines start the second fermentation in autoclave; this process lasts for about 15-20 days and fosters the development of the bubbles in the wine. After this, the other processes like pouring, filtration and bottling are carried out isobarically to avoid to damage the perlage of the wine. It is an Extra Dry Prosecco, slightly abboccato and with a sugar level of 17 g/l.

Terroir | Colmei è il termine dialettale con il quale si individuano nella regione nord della provincia di Treviso le cime più alte delle colline sulle quali si scorgono i vigneti. Bisol possiede questi vigneti nei luoghi più vocati per la produzione di uva Glera da Prosecco queste colline sono ad una altitudine di 250m sldm che assicurano una conservazione del patrimonio acidico e aromatico alle uve che poi lo trasferiscono nel vino. L'esposizione dei vigneti del Cru Colmei è Ovest/Sud-Ovest e la forma di allevamento è il Doppio Capovolto con una densità di impianto di circa 4500 ceppi/Ha. |
