San Daniele Ham PDO Riserva 24 months Picaron is produced by the town of the same name in the northeastern region of Friuli Venezia Giulia. San Daniele is recognisable by its distinctive guitar shape, the presence of the pig's foot and the imprinted consortium mark. The ingredients that make up this delicious ham are only the thighs of Italian pigs and salt; no preservatives or additives are used to produce the ham. San Daniele has been recognised as a PDO product since 1970. The law requires that the ham must be processed within the municipality of San Daniele. The art of manufacturing has been handed down for centuries from generation to generation, every last detail is taken care of. The difference between San Daniele and other hams is mainly due to the microclimate in San Daniele del Friuli, where winds from the Carnic Alps meet breezes from the Adriatic Sea, making the climate extremely suitable for the production of this raw ham.

How it's made | Prosciutto San Daniele is made only from pork and sea salt. The ham can only be processed in the town of San Daniele del Friuli. The production cycle lasts at least 13 months. The process begins with the sorting of the legs, which are placed in a cold room to firm up the meat, followed by the salting of the meat, traditionally the kg of salt used should be equal to the weight of the leg. The leg is then left to rest for four months and washed, which invigorates and starts the maturing process of the meat. To prevent the meat from drying out, suet, a mixture of rice flour and fat, is applied to the parts of the meat not covered by the rind. Finally, the San Daniele ham is matured under optimal conditions. Before being marketed, the ham is branded with the consortium logo. |
