The Pramstrahler wild boar salami is made partly from pork, the grain of this salami is medium with the fat part cut in equal parts from the wild boar and pork meat. Pramstrahler wild boar salami is a different salami from the classic one, it has a red colour, a more intense flavour typical of game, it is excellent eaten as an aperitif accompanied by a structured red wine.

ingredients | Per 100 g finished product: 110 g (66%) pork, 55 g (33%) wild boar meat, salt, spices, natural flavourings, dextrose. Antioxidants: ascorbic acid, sodium ascorbate. Preservatives: sodium nitrite, potassium nitrate. |
How it's made | Before being used, the wild boar meat is macerated with spices and salt, then it is minced with pork, minced and stuffed into the casing. The curing of this cured meat takes place in specific cells and cellars at controlled temperature and humidity. The maturing lasts about 30 days. |
