Fiorentina Polacca Friesian breed matured for at least 30 days using the dry-aged technique. The cut is in the loin located in the back of the bovine. The Fiorentina steak is a heavy cut, often weighing more than a kg, with a T-bone and is almost always cooked over hot coals or a grill.
