The Pinot Grigio is a grape variety that is a genetic mutation of Pinot Nero, San Michel Eppan winery produces this wine thanks to a selection of the best vineyards of Pinot Grigio grown in the Adige Valley in Trentino. Pinot Grigio grapes are manually harvested around the early days of September and taken immediately to the winery for pressing. The musts are made clear and inoculated with selected yeasts so alcoholic fermentation takes place in the steel at a temperature of 15 ° C for about 15 days. Pinot Grigio San Michel Eppan 2015 remains in contact with lees for about four months before blending and bottling.
