Peter Zemmer Sauvignon Blanc is a wine made for 100% Sauvignon Blanc grapes, an aromatic grape variety with an unmistakable sensory profile. Peter Zemmer winery uses the cold maceration to enhance the aromas potential of Sauvignon blanc, maceration of 6-8 hours to extract the aromatic compounds present in the skin of grapes. The Sauvignon is harvested around the middle of September and taken to the cellar for de-stemming, the grapes are placed in a controlled atmosphere in the absence of oxygen at low temperature to macerate. After this process the grapes are gentle pressed and the must is fermented in stainless steel at 16 ° C for 20 days, then the Peter Zemmer Sauvignon Blanc is aged on its lees for 6 months before blending and bottling.
