Metello pecorino cheese in chestnut peels is a Tuscan pecorino cheese with a hard paste of cow's and goat's milk, it is brownish yellow in colour with rare or absent holes, the aroma is intense and marked but never intrusive with an unmistakable and full taste. The taste is persistent with an aroma reminiscent of the chestnut groves of the Tuscan-Emilian Apennines.
