Pasetti Passerina Testarossa is a wine produced from Abruzzo Passerina grape grown in vineyards that extend on a hillside that goes back to the eastern part of the valley (southwest exposure), starting from a fresh water mirror, considered as the source Of the Tirino torrent. It is an uncontaminated environment characterized by high brightness, low humidity, frequent breezes, a thermal excursion between day and night that in the ripening period can reach even 20°C for a complete and balanced ripening with high production of aromatic precursors in grapes. Once ripe the Passerina grapes are taken to the cellar for the vinification in white, criomaceration at 4 ° C for 24 hours, gentle pressing, with subsequent cooling to favor decantation. Fermentation with the aid of selected low temperature yeast (10 ° C - 13 ° C) in steel. After fermentation Pasetti Passerina Testarossa refines for two months on its fine lees before blending and bottling.
