Nebbiolo Langhe DOC Aldo Clerico

Langhe Nebbiolo Aldo Clerico is a wine made with only Nebbiolo grapes from the youngest vineyards, which are around 15-20 years old, while the oldest Nebbiolo grapes are selected for the production of the Barolo. The harvest takes place around middle of October, the grapes are brought to the winery, de-stemmed and put in stainless-steel vats for the alcoholic fermentation with maceration. This process lasts about 12-15 days, depending from the vintage, and remounting is carried out daily in order to extract the fine elements of the grape skins and seeds. The wine is then separated from the skins and left to age in barriques for 14 months. At the end of this time, wines are blended, bottled and left to rest in the cellar for 4 months before being released on the market.
