Moscato d'Asti Vigna Senza Nome is a wine made with 100% Moscato grapes and according to the Moscato d'Asti DOCG regulations, that means this wine has a high residual sugar. The Moscato is a very peculiar family grape variety whose name comes from the word 'muscum' (moss) due to its aromatic features. The grapes are hand-harvested and brought to the winery as soon as possible for the de-stemming and the cold maceration. This process consists of macerating the must with the grape skins for few hours (depending on the vintage) at a temperature of 4°C in modified and oxygen-free atmosphere. The cold maceration allows the aromas of the Moscato grapes to be transferred into the must and then into the wine. The fermentation takes place in thermo-controlled steel tanks for few days at a maximum temperature of 16°C in order to allow the yeast to release the aromatic potential of the must. When the expert decides that the alcohol content is sufficient (usually around 4,5%-5%), the fermentation is stopped through a drastic dropping of the temperature of the wine to -4°c. Afterwards the wine, that is still sweet, is micro filtered and bottled, the results of which are pleasantly 'lively'.
