Millè Franciacorta Villa Crespia Brut is a wine that comes from 100% Chardonnay grapes so it is a blanc de blanc wine of elegance and finesse. The Chardonnay grapes are harvested on average around the middle of August, beginning of September, once in the winery the Chardonnay grapes are gentle pressed and the must is fermented in steel at a controlled temperature. Millè Franciacorta Villa Crespia Brut is a Franciacorta DOCG wine produced with a different philosophy than traditional. The Chardonnay base wine remains in steel tanks aging on its fine lees for 30 months before blending and bottling with added sugar and yeasts for refermentation. This period in steel tanks on the fine lees improves the wine as the regular batonages allow an increase in the structure and fineness of the base wine. After the refermentation in bottle the Millè Franciacorta Villa Crespia Brut remains ages for 30 months before being released on the market.
