The Fiorentina steak is a meat cut famous all over the world for its exquisiteness. The Fiorentina steak comes from the steer (female calf younger than 12 months) or from the heifer (female cow between 16 and 22 years of age and has never given birth). The cut is the loin on the back of the animal. The Fiorentina steak is a big and heavy cut that usually weights more than one kg. It shows a T-bone and it is always cooked on embers or on the grill. The history of this steak is old like the city of Florence, where it used to be consumed on the 10th of August (the night of San Lorenzo) cooked on the embers of the many fires which were alight in the entire city.

How it's made | The Fiorentina steak is made from the heifer's loin. It is a cut that included the bone and a small part of the fillet. The Fiorentina is usually bigger than the classic rib-eye steak and it can reach 1.7 kg. The meat is left in specific rooms for 2 weeks until it is high. This is a very important step because it makes the meat tender and tasty. The Fiorentina steak is cooked for several minutes on both sides on embers or on the grill, the best wood to use is oak or olive-wood. Leave the meat near the charcoal for the first minute, then put it higher and turn only once after 4/5 minutes according to its size. To finish cooking, stand the Fiorentina on the bone-size for the last 5 minutes. All this without any seasoning. |
