How it's made | Per la produzione del Capocollo toscano si utilizza la parte del lombo di suini esclusivamente nati ed allevati in Italia. Le carni vengono lavate, asciugate e cosparse con aceto di vino prima di essere aromatizzate con spezie e sale. Una volta speziate la carne viene inserita nel budello e legata. La stagionatura è di diversi mesi in celle a temperatura e umidità controllata. |
