Lugana Selva Capuzza

This wine is made from the pure vinification of Turbiana grapes, harvested by hand before reaching full ripeness. Processing begins with soft pressing of the grapes, followed by alcoholic fermentation at a low temperature, controlled by selected yeasts, to preserve the freshness and aromaticity of the grape variety. Generally, malolactic fermentation is not carried out, to keep the wine's natural acidity lively.

During the winter, the wine is aged in contact with the fine lees through the "batonnage" technique in steel tanks until January/February. Then, between March and April, it is bottled and, after further bottle aging of one to two months, it is ready to be put on the market. This process guarantees a high-quality product that enhances the purity of the Turbiana grape variety.
