Preparation

  1. Bring a pot of salted water to the boil and cook the spaghetti until al dente, following the instructions on the package.
  2. While the spaghetti is cooking, in a large frying pan, heat the extra virgin olive oil over medium heat. 
  3. Add the grated roe and anchovy colatura. Mix well to amalgamate the flavours.
  4. Drain the spaghetti al dente, retaining some of the cooking water. 
  5. Transfer the spaghetti directly into the pan with the bottarga and anchovy colatura. Add a little of the spaghetti cooking water if necessary to create a cream.
  6. Stir-fry the spaghetti in the pan over medium-high heat for 1-2 minutes, until well seasoned and enveloped in sauce.
  7. Add salt and freshly ground black pepper to taste.
  8. Serve the spaghetti hot, garnishing with freshly chopped parsley and a drizzle of extra virgin olive oil if desired.
  9. Match the wine for a pleasant dining experience.
