Laimburg Sauvignon Blanc is a wine made from 100% Sauvignon Blanc grapes from Laimburg winery in South Tyrol. Sauvignon Blanc is a grape variety that is very well expressed in these areas because of the cool weather, not too hot that would lead the losing of freshness that distinguishes these wines. Sauvignon Blanc grapes are manually harvested around the beginning of September and taken to the cellar for destemming which follows a short skin contact period allowing musts to enrich in aromatic substances present in the skins. After a gentle pressing the musts are inoculated with selected yeasts and alcoholic fermentation lasts for about 15 days at a temperature of 13-15 ° C, which allows the yeast to better express the aromatic potential of the Sauvignon Blanc grape variety. After fermentation the Laimburg Sauvignon Blanc wine is aged on its fine lees for several months before blending and bottling.
