Lagrein Peter Zemmer Raut" is a wine produced with Lagrein grapes typical of the wine-growing area of Trentino Alto Adige. Lagrein Peter Zemmer "Raut" is made from Lagrein grapes grown in clayey soils that are close to the farm. The Lagrein grapes are harvested around the beginning of the month of September and taken to the winery for vinification. After de-stemming, the fermentation is carried out in stainless steel tanks at a temperature of 28 ° C for about 10 days during which numerous pumpovers and rackings allow optimal contact between the skins and the must-wine. Then the Lagrein Peter Zemmer "Raut" is separated from the skins, 70% of the wine is put into aging in large oak barrels while the remaining 30% is aged in barriques of 2nd or 3rd passage up to the assembly and to the bottling.
