the grapes are harvested at full ripeness after careful tasting in the vineyard. Divided according to the vineyard of origin, the grapes are vinified separately upon arrival at the winery. After a brief pre-fermentative maceration of 2-3 days at low temperatures, the grapes begin fermentation in thermoregulated steel tanks for a period ranging from 10 to 25 days during which extraction is carefully regulated through punching down and pumping over , taking care not to exceed 30°C. Once maceration is complete, the free-run must begins the aging phase, which takes place 70% in second- and third-passage French oak barriques and 30% in steel tanks for a period of 10 to 12 months. Subsequently, each individual batch is tasted for the making of the final blend.
