How it's made The kaki is a fruit of Asian origin which was imported in the period of the Romans. The khaki used by Sapori Vesuviani, precisely kaki vanilla is used, which is sweet and not tannic. When kaki is ripe it is suitable to be put in EVO oil with vinegar and salt.
Storage Once opened, the jam needs to be stored in the fridge.
