Riccio is a cheese produced at high altitude in Val Cavallina from the Paleni dairy. The vaccine milk used comes from pastures in Val Cavallina and Val Seriana. The cheese that is produced is semi-white, with a white mold covering the crust, it is an edible mold that gives the cheese an aroma that resembles moss. It is a short maturing cheese, excellent accompanied by a good red wine and a salami like bresaola.
