Hausmannhof Haderburg Sauvignon is a wine produced from grapes grown in Sauvignion Blanc mountain vineyards of Hausmannhof estate owned by Haderburg winery in South Tyrol in the municipality of Salorno. The Trentino territory is particularly suited to the cultivation of Sauvignon Blanc grapes because it is not excessively hot to ruin the aromatic profile of this delicate variety. The grapes are harvested around the end of September and brought to the winery for pressing in a non-oxygenated environment to avoid the oxidation of the must and therefore the loss of valuable aromatic substances. The musts ferment in stainless steel tanks for about 15 days at low temperature and the wines that compose Hausmannhof Sauvignon Haderburg remain in aging until the spring following the harvest before blending and bottling.
