Guido Manara Rosso del Veronese

Guido Manara Rosso del Veronese is a experimental" wine from the Manara winery, a wine very much appreciated by the connoisseurs as it is produced with Amarone's technique using international vines such as Merlot and Cabernet Sauvignon. The grapes are harvested in perfect condition and placed in small boxes for drying in rooms with moisture and controlled ventilation called "fruttai". In these places grapes lose about 50% of their weight in 45 days of drying by concentrating their content of aromas, polyphenols and sugars, then grapes are crushed and then fermentation begins with maceration. During the fermentation, numerous pump over and delastage are repeated to allow the dried grapes to shed the substances they have concentrated during the drying process by greatly enriching the wine. After this phase, Guido Manara Rosso del Veronese is separated from the skins and aged in French oak barrels for 12/24 months before blending and bottling.
