Grillo is a white grape variety, native of Sicily. This variety has an incredible potential because it can create wines which are peculiarly aromatic but also create wines with a great structure and with a good ageing potential. The grapes used to produce Altavilla della Corte Grillo are handpicked and soft pressed. Must fermentation takes place in steel tanks. The wine is refined by extended lees for 3 months in steel tanks and batonnage is carried out weekly.

Terroir	I vigneti si trovano nella zona collinare del trapanese i suoli sono di medio impasto tendenzialmente argillosi quindi garantiscono un buona dotazione minerale dei mosti. L'esposizione dei vigneti è ad ovest e la densità di impianto è di 4500 - 5000 piante/Ha e la forma di allevamento è una controspalliera con potatura a guyot.
