Gorgonzola DOP is a blue cheese, raw paste, produced exclusively with pasteurized whole cow's milk. The paste of sweet Gorgonzola PDO cheese is white and straw-coloured, mottled by the development of muffec (blue) with characteristic blue-greenish and/or blue-grey veins. The flavour is sweet and the minimum duration of maturation is fifty days and maximum one hundred and fifty days.

Gorgonzola is a short/medium matured blue cheese originating from Lombardy in the homonymous Gorgonzola village. This cheese was one of the first to have the DOP recognition, legend has it that the gorgonzola cheese was born by mistake, abandoned by a young man in the cellar for one day, the next to make up for the mistake the young man added fresh curd again, tasting it the cheese had a formidable taste and then decided to reproduce it. The sweet gorgonzola is matured for no more than 50 days, it is a semi-soft cheese with the characteristic blue colour given by the Penicillium mould. Produced with cow's milk, gorgonzola is a very tasty and characteristic cheese.
