Pinot Nero Schweizer Franz Haas is an important wine in the Alto Adige and Italian wine scene. It is made with one of the hardest grape varieties to be planted and grown ever: the Pinot Nero. Pinot Nero Schweizer is made with only the best vintages, that means all the conditions have to be present to allow the Pinot Nero to ripen and reach the right amount of concentrations to ensure a high-quality level. Franz Haas is still testing and investing a lot in this grape variety. The grapes are hand-harvested and brought to the winery for the de-stemming. They are then put in stainless steel vats where the alcoholic fermentation at a controlled temperature takes place. Daily remounting and wine-pressing ensure the transfer of polyphenols and aromas from the skins to the must. After this process, the wine is separated from the skins and put in barriques for 12-15 month ageing. After blending and bottling, Pinot Nero Schweizer rests in the cellar for a year before released on the market.
