Franciacorta Extra Brut Vigna Dorata is a classic Franciacorta method produced from Chardonnay and Pinot Noir grapes coming from Sala-Colle vineyard which are handpicked in the last week of August in the chiller hours of the day. The Chardonnay is brought as fast as possible in the wine cellar for the pressing, where the whole grapes are crushed, the musts are divided into first and second selection, based on pressure from which they were generated. The alcoholic fermentation takes place in steel thermo-controlled containers in which they are carried out several batonages to provide the wine structure and to release richer and stronger scents. Around March, the wines are assembled and bottled adding sugar and yeast, and in the bottle there will take place the second fermentation, which makes the Chardonnay Franciacorta wine only after at least 24 months of aging in bottle. After the wine disgorgement Franciacorta Extra Brut remains in the cellar for further refinement, for other four months before being labelled, packaged and traded.
