The Franciacorta Saten Vigna Dorata is a Franciacorta metodo classico made with Chardonnay grapes which are hand-harvested during the last week of August in the chilliest hours of the day. Chardonnay grapes are brought to the cellar for the pressing as quickly as possible where the whole bunches are pressed. Musts are divided in first and second selection according to the pressure that have been created. The alcoholic fermentation takes place in temperature controlled steel tanks where several batonnages are carried out in order to give body and aromas to the wine. Around March wines are blended together and bottled with the addition of sugar and yeast, so that the second fermentation will take place in the bottle. This Chardonnay will become Franciacorta after at least 24 months of bottle ageing. After the disgorging, the Franciacorta Satèn stays in the cellar for another 4-month ageing before being labelled, packed and released.
