Italy is the main cheese-producer in the world; the Italian word for cheese is formaggio, which comes from the Greek word formos, the old basket where the curd was put in order to give the cheese its shape. Regarding fresh cheeses, some of the most famous are the traditional Burrata from Puglia, cow's milk mozzarella and buffalo mozzarella, both are delicacies from Campania, and the Gorgonzola from Lombardy. Today Italian cheeses can have two designations: DOP (Protected Designation of Origin) and I.G.P. (Protected Geographical Indication).
"I Formaggi della Famiglia Busti" is the distinguishing mark of the products of the Caseificio Busti, which guarantees their authenticity and origin. Alessandro and Remo Busti, shepherds originally from Alta Garfagnana, began their dairy activity in October 1955, very close to the current production site of Acciaiolo, in the municipality of Fauglia in Tuscany. Today Stefano Busti, heir of this precious tradition together with his sons Marco and Benedetta, runs the family business and is personally involved in the production and quality control of the products, still made today with the same criteria of the time.
