Fontina is a long-seasoned medium-fatty-brown cheese with the trademark D.O.P. For the production of Fontina only cow milk is used, the farms from which milk is derived are mostly located in the alpine. Fontina D.O.P is an ancient cheese, in fact the first quotes date back to 1477 in the Somma Lactinorum. The cheese is brown in orange color, the crust is thin with elastic paste and with a characteristic fine straw yellow color. Fontina cheese is suitable for long ripening. Medium persistent aromatic and delicate taste.

How it's made For the production of Fontina raw milk is obtained from a single milking, to which is added calf rennet. The resulting curd is crushed and cooked to about 50 degrees. The pasta that is obtained is inserted into the tips of concave barking. Bleeding is performed for the elimination of serum. it follows salting and brushing for a month which gives the typical orange-colored crust and seasoning.
