The pasta Vicidomini is produced with durum wheat that is not only 100% Italian but rather from Altamura in Apulia. The Vicidomini Fischiotti are produced with Apulian durum wheat which, is processed by Vicidomini using only bronze extrusion which makes the dough more rough, therefore able to better absorb the sauces used in the kitchen. The pasta is dried on ventilated frames and stays up to five days depending on the formats.
