Montalcinellais is a traditional salami. There are old writings, dated back to 1889, that link this amazing salami to the region of Tuscany. The Montalcinella is unique, thanks to the fennel seeds or flowers which are added during the preparation of the salami. Historically fennel was used to cover the faults of the wine, consumed together with the salami. In this way they could sell more of the salami and also the faulty wine. Another important feature of this salami is crumbliness when the salami is sliced. Montalcinella is bigger than the classic salami. Montalcinella taste is fresh, incredibly tasty and never bitter.

How it's made | La Montalcinella al finocchio si prepara utilizzando non sempre delle parti nobile del suino. Normalmente per la preparazione si usa la parte della pancetta prosciutto spalla e la gola. Queste parti vengono addizionate a parte di guanciale e altre parti grasse del maiale. La macinatura della carne è stretta all'impasto si aggiunge aglio vino pepe e semi/fiori del finocchio. Il budello utilizzato per insaccare la Finocchiona toscana è naturale e deriva dal manzo. |
