The basis of this sauce are tomatoes grown directly by the company Quarto dei Greci harvested when ripe and transformed into this fantastic sauce with the addition of basil, carrots, extra virgin olive oil, onion, celery, carrot and parsley. All the ingredients for the production of the sauce all'arrabbiata are produced by the farm, the recipe used is that of the local cuisine of Molise.
How it's made | The farmer's sauce is produced with freshly picked tomatoes, the selected tomatoes are washed and blanched in boiling water, once cooked are passed through a sieve so that the solids as the seeds separate. All the added ingredients are cooked over a low heat with the tomato and once cooked are placed in containers with basil and salt and are hermetically sealed and pasteurized to make them sterile. |
